Sandwich-e Kalbas ~ Persian Mortadella Sandwich
I have previously professed my absolute love for Kalbas, Persian Mortadella. There is nothing like a delicious Kalbas Sandwich. It’s the perfect simple lunch or dinner. It’s even more perfect when out on a picnic! I like mine simply made with 4 ingredients:
A few slices of Kalbas, sliced tomatoes, Persian pickled cucumbers sliced length wise and…
… a handful of Sabzi, fresh herbs.
I like to stuffed it all in a freshly baked crunchy French Baguette! I loved biting into the sandwich and getting a taste of each one of the ingredients! Yummy!
Serve with a side of Mast-o-khiar for added yumminess!! Or with a glass of cold Doogh!

oh my god, this is what we’re having for dinner. With the busy lifestyle that we have it’s great to give ourselves a break once in a while and enjoy some sandwich-e kalbas. Not that we really need the excuse 😉

Thank you for bringing back good memories. At lunch time from high school we always went to the famous “Andre” sandwich place. it had the best sandwiches, from tong to olivia to kotlet, but the most famous was the kalbas, made with baguette, pickles, tomatoes but what made it special was chopped up onion with parsley. I still have to make it this way. But i love your version of sabzi in it. My mouth is watering!
