Khoresht Lubia Sabz ~ Persian Green Bean Stew

This time of the year Green Beans are in season. I love going to the Farmer’s Market and seeing piles of them waiting to be purchased. For those of you who love Lubia Polow, Persian Rice with Green Bean, you will definitely

like this khorest as it’s similar.  This Persian Green Bean Khoresht is simple to make and if you don’t want to use fresh green beans, frozen ones are just fine as a substitute.

Ingredients

1 lb stew meat
1 large onion
5 garlic cloves
1 tsp turmeric
14 oz diced tomato can
3 tbsp tomato paste
1 lb green beans
2-3 tbsp lemon juice
salt & pepper
oil

Small dice onion and mince garlic. Saute until just past translucent in some oil. Add turmeric and mix well.

Cut meat into 1 inch cubes. Season with salt and pepper and add to onion. Brown meat on all sides. Add 2 cups of water, cover and simmer on medium low for 1 hour.

Add can of tomatoes, tomato paste, and 1 cup of water.  Let come to a simmer and adjust seasoning as needed.

In the mean time remove string from green beans, remove ends and cut into 1 inch pieces.

Saute green beans in some oil for about 3 minutes making sure to season with salt.

Add green beans to stew along with lemon juice. Cover and simmer on medium low for 1 hour.

Serve over Chelow, Persian Rice.
