For the second recipe of Pomegranate Week 2013 I have a great addition to the MPK recipe bank! Yes indeed, what you see above is Lavashak AND it is Pomegranate Lavashak! I have talked about my love for our version of “Fruit Rolls” or “Fruit Leather” on the Plum Fruit roll that I posted a couple of years ago.
This recipe was a little challenging for me because I could only rely on the juice of the pomegranate, not its pulp. I had to strategize; the first time that I made it, I ended up with hard candy. It was delish, mind you, but that’s not what I wanted as my end product!! So I tried a couple combinations and I finally decided on today’s recipe!!!
What I love about this recipe is the fact that there is no sugar involved! The fruits used in this recipe speak for themselves! Be aware though that it is on the sour side. Of course the taste will vary depending on the pomegranate juice that you end up using. I highly recommend juicing your own pomegranate for this recipe. If you find it too sour, then you can either add a bit of sugar or simply buy the store bought juices.
Ingredients
1 cup pomegranate juice
1 medium quince
2 tbsp lemon juice
Juice enough pomegranate seeds to have one cup of liquid.
Place pomegranate juice, diced quince, and lemon juice in a pot and cover. Bring to a boil on medium flame and allow to simmer for about 30 minutes.
 With a hand blender puree the fruit until it has a smooth consistency and it’s void of any lumps.
Line a cookie sheet with parchment paper. Evenly spread the pomegranate and quince mixture on the cookie sheet.
Bake at 250° for 1 hour or until the liquid mixture takes a leathery texture.
Pretty simple and deliciously tart!!! YUM!
