Although I absolutely love fish, I absolutely loath the smell that it leave behind when cooked inside the house. Because of this I seldom cook fish indoors; I generally much prefer wrapping it up in some foil and throwing it on the BBQ. The only time that I end up cooking fish indoors is when I bake it for our Norouz Party.  Many years ago I learned a simply homemade air freshener technique that neutralizes the lingering smell of fish inside the house. It works perfectly for me every time!

When making fish I generally always have some extra citrus laying around. You can use any combination you prefer. I had leftover lemon, lime, and orange from my White Fish recipe.

Just place either slices and/or citrus peel in a sauce pot along with a couple of cinnamon sticks and whole cloves.

Fill sauce pot with water. Bring to a boil, then reduce to a slow simmer. Allow to simmer for the next two to three hours making sure to add more water if the amount of water is reduced.

You’ll be amazed at how well this simple homemade air freshener works. It’ll fill your kitchen with a clean smell of citrus and warm earthy spices. I hope this recipe will come in handy for those of who are having your Norouz Party this weekend!
