Pan Fried White Fish
In preparation for Norouz here is a fish recipe that can be served along with Sabzi Polow, Rice with Fresh Herbs. This is a super easy recipe and pretty quick too! You can use any kind of white wish, I would suggest using a type that is not too flaky and that holds its shape in the cooking process. For this recipe I used Wild Cod. This recipe is enough for 8 pieces of fish.
Ingredients
8 fillets of firm white fish
1 egg
1 cup flour
1/4 tsp turmeric
2-3 tbsp butter
salt & pepper
oil
Place egg in a shallow dish and add some salt. Beat egg. In another shallow dish place flour and season with with turmeric, some salt and pepper. I always like to salt both my egg batter and the flour.
Place oil with one tablespoon of butter in a non-stick pan and warm up.
In the mean time, place each piece of fish first in the egg batter on both sides.
Then in the flour making sure to shake off the excess flour.
Fry chicken fillet on one side until the crust turns into a deep golden color. I love the color that turmeric adds to this recipe.
Then flip and continue cooking on the other side
Once cooked place fish fillets on a paper towel and sprinkle each piece with a bit of salt.
For a lighter batter, season fish with a bit of salt. Simply place in the flour on both sides omitting the egg batter.
Fry on each side as you would with the egg batter option. Place on a paper towel and sprinkle lightly with salt.
Serve fish with a slice or two of lemon or lime.

i do mine almost exactly the same, but in place of the turmeric i add saffron to the egg mixture and a squeeze of lime. i also add some crushed dried parsley flakes to the flour mixture! perfect for sabzi polo 🙂 try old bay spice sometime in place of the salt and pepper for a different flavor.

This looks great. Can you think of any ways to alter this so as to bake or broil some white fish to go with Sabzi Polo? Also, what are some other types of non-flaky white fish other than cod?

Sarah, you can omit the egg batter and flour and just place the fish in the oven. I would suggest some seasoning and oil rubbed on each piece. You can try Mahi Mahi or Sea Bass. 🙂

Try the indonesian method too. First marinate fish fillets in lemon juice for 15 min, later wash the fillets. In food processor make a smooth paste using red onion,garlic,turmeric, fresh ginger,coriander powder and a little water. Rub the paste on both sides of fillets.Leave it for 1 hour. Deep fry in oil in deep pan. In this way there will be no fishy smell.
