Sometimes when I am hungry, my fridge is empty, and I am feeling lazy I order in from a local Thai restaurant. Last week I ordered some delish Drunken Noodle which I had for lunch. I also ordered what they call Fresh Heaven Rolls to take with me to work and have as dinner during my break. Â The rolls are filled with vermicelli, lettuce, tofu, carrots, cucumbers and a shrimp strategically placed between the layers of the rice paper.
I have been telling myself that one of these days I need to try to make my own. I have already purchased the rice paper….

That Spring Roll is actually a Vietnamese dish named “Gá»i cuốn”. I’m from Vietnam so I eat them very often. Usually we would wrap it with rice vermicelli, cucumber, mint, lettuce, bean sprouts, boiled pork, and shrimps ( but you can change the meat with an appropriate sauce). We have 3 types of sauce to eat with it. The most common one is the peanut butter mixed with hoisin sauce. Another way to prepare that sauce is that you stir fry ground fermented bean paste ( tÆ°Æ¡ng) with garlic, sugar, and coconut water ( or broth), then sprinkle them with ground peanuts and hot chili. Other type is diluted fish sauce with lemon juice, and sugar. And the third one is mắm nêm with pineapples which I don’t know the word in English but you can find the description in here.
