Hello All,
Welcome to Persian Kitchen. This is a very exciting project for us. We have created this blog to share out Persian cooking sessions as they happen in our kitchen.
Most people in Los Angeles are familiar with Persian food because of the abundance of Persian restaurants. Many non-Persians or Iranians don’t know how to make these delicious dishes. We would like to share our recipes with all, who are venturing into this wonderful and healthy cuisine, by showing the various steps in making such delectable dishes. Additionally, we will also post about the Persian culture.

hi,
i wanted to see if you are persian yourself – ie, do you speak persian and know the farsi names of these spices? (like cumin, dill – which i think is shivid)
if you do, and you could post them i’d be very grateful.

Salaam! So happy to find this blog!
I’d love to hear your thoughts about making perfect tahdig on an electric stove. I’ve made it about 10 times and still haven’t managed to get it just right. Guess I should break down and buy a rice cooker.

Thanks for stopping by. Yes, I am Persian and I do speak Farsi. Indeed shivid is dill in Farsi. As far as Persian Spices go here they are
Cumin – Zireh
Turmeric – Zardchubeh
Cardamom – Hel
Nutmeg – Jowz-e Hendi
Saffron – Zaferan

Salaam Naurauz Mubarack!! I love Iranian cooking and I will buy a Iranian Rice cooker for the Tahdigh. I do have one question, I have used the brown dried lima beans (from the Iranian store) in Sabzi korma but the other day I found the same lima large beans in green color and one of the Iranian customer said that the green beans are used for chicken. I cannot find a recipe for chicken and beans, Is there a recipe that you can share? I cannot find anything with beans & chicken,
